This is called a Stuten. It is a north German specialty (my south German wife had never heard of it). It is essentially a sweet milk bread, similar to the S. German Zopf or French brioche. I am delighted with the result.

Wurzelbrot, which translates as root bread. The name refers to the appearance, not some special ingredient. This is a very soft dough, similar to ciabatta, but this doesn't get a second rise after forming. After 24 hours it is simply pulled out, twisted and baked.
