Tongba is really unique in that it is served as a solid. ferment whole millet, steep it in hot water for five minutes, sip through a straw filter to enjoy the liquid. once your cup is dry, refill it again to enjoy another brew! Coming in at 2–5%

Chhyang 🙌. Steam rice, mix with Marcha, then let it ferment in a solid form for a few weeks. Mix the fermented rice with water for 12 hours, filter out the rice, and you’ve got yourself an authentic Nepalis staple

T’ej is the national beverage of Ethiopia. It is made from honey, water, and gesho. It has been enjoyed for centuries—possibly millennia—dating back to at least the Aksumite Empire in 1 CE.
