Palate: sweet, mouthcoating arrival: honey, icing sugar and a little tropical fruit. Then the smoke arrives like a tsunami, covers everything and dries the mouth.
I went off peat for a few month before Christmas, this is really telling me what I'm missing

4 Palate: Sweet smoked meats, maritime salt, stone fruit, vanilla, a touch of minerality and a prickle of black pepper. With time in the glass, a note of rich roast coffee with brown sugar appears. Water brings a little more smoke and astringency.

Palate: For all the big nose, the palate is sweet and light, hot roasted nuts.
Finish: Sweet cure hams, gammon, burnt toast with slabs of butter.

Session dram, great for food pairings.

Nose: Ward 15 in the local hospital is on fire! Very medicinal peak smoke, smokey bacon crisps, Whitby kippers and some tropical fruit hints. There's an interesting marzipan note and some honey sweetness.

👃 - Yes, peat, with germoline. But it’s no one trick pony. It comes with brown sauce, cooked bacon, with a honey glaze. It’s dusty and sooty, with peaches and lychees, bring a lovely fruitiness to the mix. #WemyssMalts

Dram 4: Peat Chimney NAS 46%abv

Nose: Immediate hit with the hospital fumes, medicine cabinet, TCP, iodine, a bacon, nutty thread runs below that. Back of hand, burnt ends, meaty, bbq house (smells like Bodeans after a whisky festival!), sweet cooked meats, kabanos sausage.

Palate: Icing sugar sweet, teeny bit of heat at front of tongue. Mouth hold doesn't bring much more.
Finish: Buttery again, more heat.
Very blunt dram, bit one dimensional.

Nose: dusty, light, very closed, time leads to shortbread, baked apples, Danish apple pastry. Back of hand brings very little extra to the party.

Nose: dark berries, dried fruit, dates, figs, prunes and a lovely dunnage funk. There's some toffee pennies, a little almond marzipan and some strawberries drizzled in balsamic vinegar.

Dram 2

Palate: Sweet, then very quickly becomes bitter. Hint of pepper of front of mouth. Mouth hold brings dark fruit, black cherries, frozen black grapes (they have a very different flavour)

Finish: Bitter, chewy.

Dram 2: Velvet Fig. 12yrs. 46%abv

Nose: Varnish, black plum skins, fresh figs on verge of going over, oaky, back of hand takes it to dried fig territory, with that sticky sweetness.

Dram 1:

Palate: Drinks at far less than abv indication, sweet, buttery popcorn, again that little bit of bitterness. Mouth hold brings some heat, some spiciness.

Finish: Buttery pastry, like croissants. Quite short, but would probably layer up well.

👃- First thoughts are sweetness mixed with vegetal aromas. Light tropical fruits, melon and pomelo, with a hint of green apple skins, lots of dustiness, and evergreen boughs. Mineral water and old leather eventually come through. #WemyssMalts

Nose: orchard fruit to start, some honey and a little berry note: Apples, pears, apricot; sweet runny honey; dark cherries, blueberries. There's some vanilla here, a little earthy pine and some spicy hints.
