Our markets are ramping down for the season but the pigs keep growing. As a farrow to finish farm we have livestock year round and have carefully selected breeds to help us with this. The Mangalista was originally from Hungary region and is so hairy they look like a cross between a pig and a sheep.

We got great feedback on our one off sausage adventure batch of Spicy Fennel, but you all wanted it spicier. We cranked up the heat using three times the Thai chilies (from @fourrootfarm) in this new batch of Even Spicier Fennel.

Meet our newest creation, Zesty Pork Pasta Sauce. We sourced tomatoes, onions, garlic, and parsley from our local farm buds (thanks Willow Valley, Four Root, Waldingfield, Still Life, and Assawaga!) and combined it with our pork sausage in a bubbly, slow simmer.

As it starts to get cooler the grass stops growing. This would normally conclude a grazing season for us, but this year we have a bit of “stockpiled” grass. The goats are still out on pasture enjoying things while they can.

Similar to lamb chops, these are the “lollipop” cut of goat. Great thrown on the grill, pan seared, sous vide, or made into a curry. A very versatile and flavorful cut.

Bacon is back in stock! We’ve been out of four types of bacon for over a month now, but the long wait is over and they’re all back in stock. One of them, jowl bacon, has become remarkably more popular in the past year. Maybe it’s time to try some out and see what all the buzz is about.

Lots of new piglets this past week. Two of our sows gave birth out on pasture. Sometimes they choose to use the shelters given to them and sometimes they make their own nests. This time both made their own nests.
