I do cover it so it the outside doesn’t dry out too much (some like the crunchy part) and it’s just bread/butter/milk/spices)
And no. No one ever has been sick either.

I don't know what y'all are all doing. My turkeys are never dry or tasteless (not even the breast - it's a crime if your dark is dry), I don't brine.
Butter & spice the outside, do my mom's stuffing, throw it in the oven, cover when the top gets brown. Thats the only time I open it.
