I've been doing turkeys in the BGE for years and I just roast them indirect w/ platesetter, at ~325, starting with some smokey wood chips (not picky - apple or pecan usually) and it comes out great and plenty smokey! And its ~12 to 15 mins per pound, meaning pretty fast!
