Pro tip: if you want to show off at a potluck and have a food processor, make a compound butter! Took like no time (already had roasted garlic) and is delicious!

The simplest way to get a moist turkey is to spatchcock it, shove a few butter pats under the skin all the way from breast to thighs (and season the outside!!!!), then baste with butter. I’ve tried wet brining, dry brining, and this, and the butter was by far the quickest and most effective method
