Not to butt in on your conversation, but I've been using these Ball fermentation lids with built-in one-way valves. They've served me well for years! They come with spring-like devices that keep the contents submerged.

Such a tregedy. Zesta should be ashamed of themselves. Ashamed. Not shrinkflation, but a change in manufacturing process that ends up in a thinner, less airy, and woefully inferior saltine than what they used to make.

I grew these a couple of years ago and they were pretty but the taste wasn't good enough for me to grow them again.
But I did try making a basic cooked sauce from the early peppers just to see if I could get a purple sauce. It turned out mauve lol
