Have leveled up to 1:1 whole wheat : bread flour mix to good success. 🫡

It fits into my larger prepper vibes at the moment, but I can’t stop. I bake at least two loaves a week now.

Made a 14th-century style whole wheat + flax sourdough loaf.

Inspired by Emile Claus’s “De vlasoogst” (The Flax Harvest), 1904, Koninklijke Musea voor Schone Kunsten van België (Belgium) 🌾
A freshly baked whole wheat and flax sourdough loaf is held up against a rustic fireplace. The bread has a golden-brown crust and an airy, open crumb speckled with flaxseeds. Its hearty, traditional texture evokes historical bread-making techniques. De Vlasoogst (The Flax Harvest) by Emile Claus, 1904.
