Bok Choy is usually a cheap veg option in my organic CSA box so I tend to make this a lot. I have about 5 bok choy recipes in my rotation. I always pump up my bowl with extras the original recipe doesn't call for.

I blended up some whole wheat bread, toasted it a little and gave it a squirt of oil before adding salt, pepper, chili powder, and garlic powder. Gave the avos a little squirt as well and tossed them in the bread crumbs. I baked it for about 5 minutes-ish at 375.
