Pommes rosti (a big fancy potato pancake) with garlic and scallions, honey braised carrots, garlic honey sous vide pork loin, chive crema, sesame honey mustard.

Post stream dinner:
Sushi rice, garlic and ginger kale, seared tuna, “teriyaki” sauce.

It’s not teriyaki; it’s just some hoisin, mirin, and sriracha…but it had all the expected teriyaki flavors so 🤷

I’ve got some pics from a fancy dinner over the weekend, but here’s what I threw together tonight.

Chicken roulade stuffed with mushrooms and kale; bacon and scallion mashed potatoes; pan jus with Dijon and lemon.

I did a bunch more cooking today. Sandwich loaf and small boule from extra dough for the meatloaf sandos I mentioned last night

Then dinner was seared ahi, ginger rice, sautéed kale with garlic and pickled ginger; topped with an aioli of hoisin, kewpie, soy, and sriracha.

Bacon wrapped meatloaf for dinner/meal prep. For dinner, the ends with mashed potatoes and carrots. For lunches this week; the slightly undercooked middle seared and sandwiches. 😋

Dinner tonight is pho noodles topped with mushrooms and onions in a spicy hoisin glaze, roasted pork chop, and a Thai basil pesto with garlic, ginger, and toasted sesame oil.

This was inspired by “what if I made Thai basil pesto…”

It came out amazing and I will absolutely keep that idea for later

Pho is under way. Yes, that’s a whole femur. Also a bunch of other marrow and knuckle bones, onions, ginger, cinnamon, clove, star anise and fish sauce.
