long rectangular strips of cookie dough, half yellow (regular shortbread) and half green (matcha shortbread), on a cutting board. a tape measure just in frame implies that precision has been attempted. the rectangular strips of dough have now been stuck together with egg white “glue” in alternating patterns of three: green-yellow-green and yellow-green-yellow. they are resting on the cutting board and getting softer by the second — throw them in the fridge, quick!! the alternating three-strips have now been stuck together, also in sets of three. now when they’re cut, they should reveal a lovely checkerboard pattern. they are resting in a pan along with some more experimental pieces of dough, made with a clay marbling technique that the baker learned in pottery class. all of these pieces of dough will be chilled overnight and baked tomorrow : )
