I’ll be damned if that doesn’t taste like what I remember chicken tasting like. This will become a staple in my freezer. And the price point is decent too. I thought this would have to be a Whole Foods or Sprouts thing when it rolled out but it was at my Walmart.

Happy World Vegan Day. Vegan meal options at my work conference this week. 🫤

Thankfully this year’s conference was local to home and I was able to supplement meals knowing from past conferences what to expect. I forgot to take pictures of what I brought for myself.

Expiring silken tofu and jarred red peppers tossed in the blender with leftover coconut milk from earlier in the week. Add cashews, nooch, spices, and blend. Poured over penne and broccoli then heated to serve. 💣🫏🍝 for sure.

When you go to your boss’ retirement lunch and the people who could never eat vegan eat all the vegan food, you skip the meat and cheese and are left with 2 pieces of pepper, a slice of zucchini, onion, and a slice of bread. Blackberries, pickle wedge, and kettle chips to round it out.

Been using this pasta brand for the last couple of months. Costs about 50 cents more for half the volume over seminola pasta but I appreciate the extra fiber and protein, and lower carbs, not that I have a fiber problem, lol. #veganfood

Took a box of butternut curry soup from Costco and beefed it up with two pounds of cubed butternut squash and a couple cans of great northern beans. Cilantro and purple cabbage to offset all the yellow in the pot. #veganfood

Trying to cut the calories from the crust for the wife I dumped all my favorite pizza toppings and sauce into a pot and added a little pasta to the mix for some crust-like texture.

Homemade sausage, salami, and pepperoni, with a mix of veggies. Might roast the veggies next time. #veganfood

Mashed up some chickpeas, onion, dill relish, celery, and tahini with a side of apples. Tahini made a nice sub for the mayo I used last time.

Homemade protein biscuit from Plantifully Based. Doctored up a 1/4 pound slice of firm tofu with my egg seasoning mixture. And an Oscar Meyer NotBratwurst for the win. 700 calories and 65 proteins of yum.

3 years a vegan and last weekend I kept my promise to myself I was finally going to make my own hummus.

@maggieshayne.bsky.social’s base recipe from last weekend was first. Then freestyled a red pepper. Followed up by Nard Dog’s chocolate. 💣

More than I needed, but I was on a roll.

Blendered sauce from silken tofu, crushed tomato, nooch, lemon juice, garlic, salt, and pepper. Poured over diced tomatoes, chopped roasted asparagus, leftover rice, and Field Roast Savory crumbles.

Dry-fried some soy curls with some spices. Roasted some Brussels with garlic and herb. Mixed in with farro. Then tossed in a ginger miso sauce I recently got off YouTube from Need Never Get Old.

Thanks to @whollyjoanafoods.bsky.social for the tip on the canned mock meat at my international market. Wife had chicken and I had duck in orange sauce on white rice with a side of edamame, peas, carrots, and broccoli.

Looking forward to a repeat with different sauces/spices.

It’s so hot out this week, made this again for a cold lunch option. Yielded a little over 4 cups for the recipe. Broke it into fours today and tomorrow. I’m on a pretzel bun with chips. Wife’s eating it straight with some apple slices.

Took a couple tries but cracked the code in the best silken and firm tofu combo to get the “scrambled eggs” texture how we like them. Next time have to add in the mushrooms, onions, and peppers. Paired with the ham seitan I made and a store bought hash brown.
