here’s a few recipes that are suitable for large groups that i think everyone would be ok with me sharing given the circumstances:

Main Courses: Curries
Vegetable Korma
Ingredients for 6:
- 1 large onion
- 3 cloves garlic, crushed
- 4cm fresh ginger
- 10 cardamom pods
- 3 tosp oil
- 1 tsp turmeric
- 1 tsp ground fenugreek
- 1 tsp black mustard seeds
- 2 tsp ground cumin
- 2 tsp ground coriander
- 700ml water or stock
- 75g creamed coconut
- 150g ground almonds
- 2 tbsp lemon juice
- Salt
- 1.5kg vegetables
- Fresh coriander
A creamy nut korma that can be made with a variety of vegetables and can easily be scaled up for large quantities.
The ground almonds can be expensive so if you are making large quantities you may want to use less and add more creamed coconut instead to make sure the sauce is still thick. If you have enough time you can boil the vegetables first and use the cooking water to make the sauce, providing a bit more flavour and retaining more goodness. Good vegetables to use are carrot, turnip, cauliflower, green or broad beans, a few potatoes, cabbage, corn, or mushrooms.
1 Peel and slice the onion, finely chop or mince the ginger and roughly crush the cardamom.
• Heat the oil in a pan and fry the onion for 5 to 10 minutes until soft.
Add the garlic, ginger and spices and cook gently for a further minute.
3 Add the water, bring to the boil and simmer for 10 minutes. Slice the coconut into the pan and stir until it has melted. Add the almonds, simmer for a few minutes more, blend if you prefer a smooth sauce and season with the lemon and salt.
While the sauce is boiling, cut the large vegetables into bite sized pieces and boil them in a separate large pan of salted water. You may need to add them at different times depending on the vegetables being used. Cook them till they are just tender. Drain and stir in the sauce. Serve with chopped fresh coriander sprinkled on top.

Spicy Winter Curry
Ingredients for 6:
- 250g dried chickpeas
7 cloves garlic
1 onion
5cm ginger
2 green chilis
• 3 tosp oil
1 tsp cumin seeds
- 1 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp turmenc
- 1 tsp paprika
- 50g toasted & ground cashews/almonds
250g chopped tomatoes
- 450g/2 parsnips
. 450g/2 large carrots/1 medium turnip
- Salt & pepper
- Juice of 1 lime
- Garnish: chopped fresh cilantro, toasted nuts
Equipment:
- Blender/processor

Suitable for large amounts. Main ingredients here are chickpeas & root veggies (hence being a winter dish), in a sauce with lots of garlic, chilli and ginger.
Serving suggestions:
- Soy yogurt and chapatis.
® Soak chickpeas overnight. Cook for up to an hour until done.
• De-seed chillis, and peel garlic, ginger & onion and roughly chop. Set 2 tsp garlic aside, and blend the rest with ginger, onion, one chilli, and up to 5 Tb water until you get a paste.
® When chickpeas are cooked & drained, heat oil in a heavy bottomed pan. Fry cumin seeds for 30 seconds. Add ground cumin, coriander, turmeric, paprika, and stir through. Add nuts and paste and cook until water is evaporating. Add tomatoes and stirfry for a bit.
© Peel and cube parsnips and carrots (bite size pieces). Add to the chickpeas and up to 450ml water (enough to just cover the vegetables). salt and pepper. Bring to boil, reduce to a simmer, uncovered, for 20 minutes or until the vegetables are done.
© Boil curry to reduce the liquid if you wish. Add lime juice, garlic, second chilli, and salt and cumin or coriander to taste and cook for a few more minutes.
Coriander Chutney
Chutneys go well with curries, and you can make a quick raw one with fresh coriander. I love its flavor!
Blend in food processor 1 de-seeded green chilli, a few peeled cloves of garlic, 3cm ginger, the juice of half a lemon, salt, and 2 tbsp olive oil. Then add a bunch of fresh coriander and pulse a few times. Stir in some ground cumin, or dessicated coconut or vegan yoghurt if you like.

Root vegetable and Lentil Cobbler

Ingredients for 6:

- 1 onion
- 1 leek
- 4 sticks celery
- 4 carrots
- 2 tbsp oil
- 300g mushrooms
- 1 tsp dried thyme
- 2 tsp dried marjoram
- 2 tsp paprika
- 750g root vegetables
- 100g split red lentils
- 300ml vegetable stock
- 2 x 400g tinned tomatoes
- Salt and pepper
- 400g self raising flour
- 100g margarine
- 1 tbsp chopped fresh parsley
- 200ml soy milk
Equipment:
- Deep baking dish
- Sieve

A winter vegetable dish with a savoury scone type topping.
1 Pre-heat the oven to 200°C/400°F/ Gas Mark 6.
Slice the onion, leek, celery and carrot. Heat the oil in a large heavy bottomed pan and gently fry them for about 10 minutes. Add the halved mushrooms, thyme, marjoram and paprika and cook for another 5 minutes.
3 Meanwhile prepare the root vegetables (swede/potato/parsnips) by peeling and cutting into 2cm chunks.
Add them to the pan with the lentils, stock, and tomatoes and simmer for 20 minutes or until the lentils are just cooked. If the sauce is too runny, you can thicken it by stirring in a little cornflour made into a paste with a drop of water. Season with salt and pepper.
To make the scones, sift the flour into a bowl, add a pinch of salt and rub in the margarine. Stir in the parsley and slowly stir in the milk until you have a thick dough.
5 To construct the cobbler put the sauce in a deep oven dish. Roll out the scone dough about 1cm thick and cut into circles. Layer the circles on top of the sauce, brush with a little more soy milk and bake in the oven for 15 to 20 minutes until the scones are lightly browned.

Cottage Pie
Ingredients for 8:
- 2kg floury potatoes
- 1 Swede or 2 parsnips
- salt & pepper
- 2 large onions
-1 leek
- 4 stalks celery
- 2 Tb oil
- 5 cloves of garlic, peeled and chopped
• 3 small carrots
- 1 Tb thyme
- 300g soy mince/ 400g lentils
- 1 L stock/water
- 2 Tb yeast extract
- 2 Tb soy sauce
- 150g tomato purée
- Margarine
- Soy milk
- Wholegrain mustard
- Horseradish (optional)
Equipment:
- Masher
- Deep baking dish about 25 x 40cm/ 10"x16”

This is suitable for larger amounts with a large oven; you could skip peeling the potatoes.
A very English dish and classic comfort food. Make sure mashed potatoes are tasty - add extra salt or mustard or other herbs and extra margarine or soy milk to taste. Never mash the potatoes with a food processor or hand blender, they’ll just go gloopy and not nice.
Serving suggestion:
- With side vegetables such as glazed carrots or peas, roasted parsnips, steamed greens.
• Peel and cut potatoes into chunks; same with the swede.
Cook in plenty of boiling salted water until done, 20-30 minutes; drain well.
@ Pre-heat oven to 200°C/400°F/Gas Mark 6.
® Peel & chop onions. Rinse & slice leek & celery.
- Heat oil in heavy bottomed pan. Cook onions, leek, celery, & garlic for 5-10 minutes. Finely dice the carrots & thyme. Add and cook for another 5.
@ Add the soy mince/lentils with the stock (enough to just about cover), yeast extract and soy sauce. Bring to boil, lower to simmer until done, about 15-25 minutes. Add the tomato purée and pepper to taste.
© Mash the potatoes and swede, then add more salt and pepper to taste as well as some margarine, soy milk, mustard and the horseradish if you like.
© Spread the filling out in the baking dish and leave to cool for a little bit if you can. Spread the mash over the filling, and pat it down with your hands, then pull a fork over it to make a ridged pattern. You can put little dabs of margarine over the topping to help it brown. Bake the pie for 30 minutes or until crispy on top.

as a driver of a vehicle who has driven across many bridges, this part seems….concerning.

a close up of one end of the arched stone bridge from the OP which stops above the road. to continue over the bridge would mean falling several stories to the road below.
