I think we are agreeing. I would consider the immaculate conception of Mary to be "hidden knowledge" from the perspective of Scripture. Can't require assent to that in order to be saved.

I am not sure that's how I take the phrase. "The Scriptures contain all things necessary for salvation" to me sounds more like the claim that there cannot be hidden knowledge. You cannot go to Hell because you didn't know some secret, not-accessible in Scripture, teaching.

Yes, every version of "theological triage" faces this problem. Any seemingly allowable disagreement can be tied to a higher-ordered set of principles, if there is the will to do so.

For me the struggle is how to determine what counts as adiaphora. Since someone could just declare anything unnecessary that they don't agree with Scripture on. And yet, some things genuinely are adiaphora.

Part of the problem of course is that in some sectors of the church seemingly everything is adiaphora even including the resurrection of Christ

I do not care for the stool analogy although Hooker does have something like this for adiaphora, where Scripture is an authority but not the only one. He says that Scripture includes "full instruction in all things unto salvation necessary" & otherwise unattainable in this life
