Pretty much what Flute said!
Blendshapes (in Blender anyway) is where you set up 2 model states by moving the vertices of your model around, it comes with a slider you can adjust to pan between the two states.
IE: Sm0l -> Big
Really clever people have used this for VRChat vore mods ;P
