Not to mention animal fat is expensive af to replace. Fryer oil should really be changed every week or so, but I highly doubt these restaurants are gonna do that until it’s so old it’s actually unsafe

When I read Under the Whispering Door I had just had a death in the family, and that description is actually perfect — it was a hallmark card that you read because you want to feel a tiny bit better in the moment, but it’s ultimately meaningless fluff
