I use shortening, not oil or butter. I put it in the cast iron skillet, then put the skillet in the oven while the oven heats up. Mix the batter up, and by the time it’s ready to go the shortening has melted, & hot enough that there’s a satisfying sizzle when the batter is poured in.

Nah. OK is kind of a crossroads; Tulsa & NE if there is Midwestern. SE corner is def Southern. OKC & west of there is the Great Plains. W various local differences. Kinda like how peeps wanna say KS is the plains, but we both know NE KS certainly isn’t.
