Absolutely, suet for mincemeat. My go-to recipe (I made mincemeat with my dad-he and I were the only ones who liked it) is from the Pepperidge Farm Cookbook. It includes tongue, so it really is mince *meat*, but with all the lovely candied fruits, too. Sounds utterly awful, but it is delicious.
