My sister and her husband are coming to visit so I made a veggie lasagna (best reheatable option since airline schedules have been inconsistent). Layers - Breaded eggplant parm, mushrooms browned and finished in bechamel, and spinach/garlic. I always add a splash of marinara at serving. #cooking
Serving of vegetable lasagna on a white plate w/ basil. Lasagna layers - sliced eggplant breaded and fried, then baked with parmesan cheese before assembling in lasagna. Shitake and Cremini mushrooms sauteed until golden and then finished in a bechamel and white wine. Spinach and garlic sauteed until wilted. Ricotta added in 1 layer. Lasagna topped with fresh Mozzarella and Parmesan cheese. Vegetable lasagna just out of the oven with basil garnish Sliced eggplant breaded and fried in large pan. Topped with parmesan cheese and finished in 375F oven. Will cool and add in layers to vegetable lasagna. Cooled Shitake and Cremini mushrooms that were previously sautéed and finished in a bechamel and white wine. This will be one layer in the vegetable lasagna.
