Flourless Peanut Butter Chocolate Chip Cookies with swaps

1 cup of peanut butter
3/4 cup of brown sugar OR 8-10 pitted dates ground into a paste
1 egg OR 1 tablespoon of ground flaxseed and 3 tablespoons of water
1 teaspoon baking soda
1/2 cup dark chocolate chips
