Brown sugar is generally used in baking/cooking. It's just white sugar with molasses left in and the sugar grains are the same size as white sugar (smaller than turbinado). I've seen turbinado/demera used for sweetening a beverage, or potentially fancy baking that calls for these sugars by name.
