Intricate dashboards with mechanical tactile controls and knobs require engineering and construction. Slapping a screen on a dashboard ala Tesla is infinitely cheaper.

Touchscreens are incredibly cheap when compared to actually physical controls, just another margin enhancer at the cost of safety and utility. The EU has it right on this one.
