Montauk had the cleanest beach I’ve ever been on. I could hardly believe my eyes. Not even sticks or rocks, just sand.

This big oyster is a Belon from France. Emilia, who served me, described the flavour as much more minerally than the smaller PEI oysters. When I ate it I could taste the rocks by the ocean. She called this quality the terroir - like how wine from Etna tastes like the region’s volcanic soil.
