This happens so often, unfortunately... I think this is a result of reviewers being pressed for time and therefore not reading the review instructions thoroughly

This happens a lot actually. Usually I add comments that say "You're correct, but it's just a bit bland. Here's a suggestion to make it more interesting for your readers: ... "
There's nothing wrong with coaching (usually) PhD students in making their writing more interesting

I do this with my inbox. It takes less mental effort to just answer some emails than to actually get something done sometimes

And what about the number of co-authors? I know in medicine that the number of co-authors on papers keep increasing over time. That could explain the increase in numbers.

Again, not doubting your message, which is absolutely valid. Just curious about the reasons for this

Not saying you're wrong, but there's a lot more people who write articles than just PhD students. You also see more academic publishing from industry, so perhaps that also plays a role. While I agree with you to some extent, nuance is also important
