Today I enjoyed cats, being warm while it's frigid out, did more faith deconstruction, and watch birds and squirrels eat from the bird feeder (the squirrel feed arrived today). Graded papers. Considered home decorations that I'll probably not do. Hung out on Zoom with friends. Good day.

RIP toaster (March 4, 2021 to December 5, 2024).

Many thanks to Prepared Hero Fire Blanket (Amazon) and fire extinguisher (came with home) and to my husband's quick response to my "Holy [redacted]. The kitchen cabinets have proven fire resistant.

I used a pumpkin quick bread mix & a Bundt pan mold to make dessert. It looks extra interesting because of my failed attempt using another mold with lemon pound cake. The crumbles around the base came about because I mixed them the night before & put it in the frig, so they were too hard to crumble

Not super exciting pictures but the foaming shades of brown liquid are metheglins (meads made with herbs & spices). The 2 jars in the sink were made with "women's blend tea" from the Renaissance fair we went to & "Drink Your Vitamins" tea from Piggott family farm's Etsy store. The other 2 are made

My wonderful husband sealing what feels like 99 bottles of fig mead. Last year's fig mead was the best of all the brews we made & considering these figs moved cross country with us, I'm assuming this batch will also be the best of this year.

Saw a YouTuber using a smaller version of the "Fix-It & Forget-It Cookbook" & decided to get the big one. Love that people sent in their favorite recipes. Recipes usually have 5 steps or less (I 💜 keeping it simple). I used one of the recipes for pulled pork. Turned out yummy. Next time I'll try a

Decided to make half-pints of pickled garlic (processed for 20 minutes per updated guidelines so feeling hopeful I won't poison anyone) for Christmas gifts. Had to go to a Costco Business Center to get peeled garlic.

On the 10th, I submerged brisket in brine & put the "brining bucket" on the bottom shelf of the frig. A few days later (making a mess) I flipped the meat & then set it back in the brine & returned it to the bottom shelf of the frig. Today I pressure canned corned beef.

I saw a deer!!!! Okay, since it has horns, my husband says it's a buck, but omg!!! It's the first one I've seen in our backyard. We have a neighbor with two doors, which I was told would keep the deer away. We're in the exurbs of St Louis so I've seen deer elsewhere but not in my backyard!

In theory, this is my last batch of pickles for this year. 5 pints of bread & butter pickles & 2 pints of the Kirby cucumbers that were too small to cut up (but too big to be gerkins). This time I used the food processor to slice the cucumbers & I probably let them sit for too long in salt in, but

5 pints & 2 quarts of chicken hot packed in beef broth (each pint has different seasonings) represents my final attempt at pressure canning chicken. Last time (summer 2020) I tried, I raw packed the chicken with no extra liquid using my All American 21.5 quart canner. My election canner is smaller -

I wasn't sure we'd get to it but we were able to bottle 2 of 3 meads tonight. The 2 pictured were started in September & are a type of mead called a metheglin. Metheglins use spices & herbs so they can be medicinal. For these two, I used teas meant to help with headaches. They came out flavorful,

Rendered beef fat from the brisket that's now in the frig in a wet brine. Perhaps one day I'll read up on how to maximize the amount of render I get but today is not that day. I'll probably bring this to my mom in Phoenix for her to use.

Time to brine some brisket. If we had more freezer space, I'd make some brisket burgers but that'll be next time. I cut off a lot of fat & am rendering it down in a crockpot. After brining is done I'll pressure can it & enjoy corned beef with breakfast.
