It's the first cookbook I've bought due to a New York Review of Books review.

I knew I was on to something when I went to buy ingredients and the woman who runs my local Asian grocery told me that she could tell I planned to cook "real" Chinese food. Apparently it was the fermented black beans.

Every culture has its secret super ingredient and for China that seems to be chili bean paste.
