It's the first cookbook I've bought due to a New York Review of Books review.

I knew I was on to something when I went to buy ingredients and the woman who runs my local Asian grocery told me that she could tell I planned to cook "real" Chinese food. Apparently it was the fermented black beans.

This argument is of course nonsensical, but only even has a hope of working if you write out of American history the wars with Native Americans, something you must do to act like this stuff is the exception rather than the rule when America fights non-white people.
