You can have an official canon that's just it, obviously.
You can have an original canon and then later takes on that everyone agrees are not the same thing (eg Sherlock Holmes) and you can evenhave so many versions that none can be official (eg King Arthur, Robin Hood).

Ultimately I increasingly think fans taking over the running and then that being the /official/ version just doesn't really work
