That’s what I always do - works every time

Roast chunks of aubergine with courgette, peppers and onion and add to pasta with Parmesan or to a tomato curry sauce or serve with haloumi and couscous/tatziki. All delicious

I’ve no idea what kind they are. I didn’t plant them - they appeared a few years ago so I’m guessing one of my neighbouring plot holders did. A very nice surprise for me.
