Funnily enough, I just watched Joachim Trier's Sentimental Value, which *does* have a sequence where archival files are retrieved from the stacks and then delivered to a historian and pored over, in a pretty realistic, if mundane way.

I second The Bear, though that aspect of it is only really evident in the first season. The British one-take film Boiling Point is also great on kitchens and restaurants, even if it condenses a lot of SNAFUs in one service. I think there was a TV show based on it too.
