Zorin is an excellent entry into the world of Linux for someone just starting. It has a desktop that should feel right at home for a Windows user.

FFXIV will run directly from either Steam or using the helper app mentioned elsewhere in this thread. I played all of Dawntrail on Linux, no issues at all. And I got better frame rates.

If you'll be moving FFXIV eventually don't forget to back up your settings from the log-in panel. You get to it from the gear icon as I recall. Saves you from having to redo your tool bar settings, armor sets and the like.

Mint is an excellent choice. The website has clear instructions, so it's easy to install quickly with minimal fuss. The UI feels Windows-ish, so navigating it is intuitive. The most "techie" thing you'll need to do is get into your bios to force your PC to boot from a thumb drive.

Seconded! It's very straightforward to install and they publish good help documentation online. Moreover, as a lifetime Windows user who has experimented with a dozen districts or so, Mint's maintenance process for updates is easier than Windows and way, way faster, based on my limited experience.
