RJ-45 is just such a nice solution, being cheap and with plenty of conductors and locking. Is the issue waterproofing? XLR isn't more waterproof, I don't think?

Seems like no. How could you even get the CAN lines, ground, and power over three wires? If ground were just for a voltage reference, you could filter the CAN lines I suppose, but it also carries 1 A if the power line does.

Signal is also open source, and there is something of a network effect (aka critical mass of users) to it that makes it worth using, especially for quick and easy encrypted communication if it's urgently needed.
