Ah. I served it with amatriciana, which is a tomato sauce, but I undercooked it in the water and then finished it in the sauce. So the middles were full of yummy goodness instead of hot water and sadness.

I like orecchiette but it’s such a hassle to keep the pieces properly separated. Farfalle is even harder to get right because there’s zero margin of error between “the middles are too hard” and “the ends are too soft.”

Maybe it depends on the brand? The one time I found bucatini, it was quite good. Or maybe it’s super fussy about what kind of sauce.

Mad respect. I demanded to re-take (and passed) the oral exam for advancement to candidacy out of spite (after deciding I didn't actually want to continue), but didn't have a whole dissertation's worth of spite.

Whole spices stay good a long time. I've got green cardamom pods of the same vintage and they're fine. Same for whole nutmeg, allspice, and cloves.
