… I looked through 100s of 1-year olds at my local nursery to select two that had already two branches correctly placed and I chopped all others off. You can gain 1 year like that but not more

Love it too! But maintaining it is a bit of work. I’m on rung 4. Would definitively recommend a more vigorous root stock than the ultimate height of the espalier would imply. I started two pears from maiden whips but my two apples that provide privacy like in your case…

Some already trained trees exist but cost a fortune and usually only the first one or two rungs are formed. Have you decided what root stock and tree you want?

Not sure where you are based, but I got my trees from Orange Pippin in UK. They have a fantastic website with tons of choice and also advice on how to pick your root stock. I’m more a metric person myself but what you say sounds entirely feasible- it just takes time
