In my experience, the biggest challenge is finding the right bread (black bread is better than a generic sourdough rye), but that’s probably a lot easier in New York than St. Louis!

It’s comparable to kombucha, maybe a little stronger depending on the brand of store-bought. Homemade varies widely (but is much better).

Yes! And the alcohol is negligible. Whether a child actually will drink it is a separate question.
