Do you have any recommendations for metallic embroidery thread? I used 2 metallic machine threads for a project & while I made it work, I wish I had paid more attention when ordering it!

So Babish says 135F for 2 hours followed by an ice bath while the maker of the sous vide I have suggests 75 minutes (but otherwise the same). More often than not, I do the shorter time b/c when I double check the directions the written recipe is faster than watching a video (reposted w/ temp scale)

He countered with a very sensible argument about food safety & his elderly family members who had been eating the pie ("please don't kill Great Aunt Terry"). So now we use the sous vide to pasteurize eggs. Although you can apparently buy pasteurized eggs in some places which would be easier (2/2)
