.....Or so it seemed. Eventually I went back to my run and unpaused the game, at which point a critical weakness of the infinite juggle strategy revealed itself:

While testing it out, I realised that it was maybe completely busted. By repeatedly throwing jams into your stack you could keep your juggle airborne without resetting the chain count, keeping it going indefinitely. Which totally upends the balance of the game!
