this also drives me a bit nuts; bread-type recipes are super bare-bones and have like 4 ingredients — it's all about practiced technique and that's not something that's easy (or even useful) to write down
What cracked me up was people asking for the recipe. That is a level of excellence that you can’t get from following someone else’s instructions. An important thing to be able to recognize.

I think a lot about this story regarding parents being charged after a driver hit and killed one of their kids. Police lecture parents about responsibility, but there's no accountablity for those who created a street where it's unsafe for a kid to walk to the store.

Something that is always funny to me is how a slope that is pleasant to ride but still very much a uphill (3%) is almost indistinguishable from flat on graph paper.
And a slope that is *incredibly* challenging to climb on a bicycle (20%) looks like something that would be no big deal.
