I don't like the aftertaste of most sugar substitutes, but that's a me-problem (and also a luxury I get to have since I can still have sugar). The worst thing artificial sweeteners will give me is a momentary face like a cat that smelled something stinky.

I could kinda see it in the same pedantic sort of way that an art student would tell you black and white are not colors unto themselves but extremes of value. Salt as an ingredient has enough other functions re: microbial activity and moisture control that flavor isn't the only thing it does.
