35% stone ground whole wheat with sunflower seeds, pepitas, and almonds. Bulk ferment for about 7 1/2 hrs at 76° dough temp. 19 hours cold retard. Good rise and tight but not dense crumb.

Our satsuma trees are loaded this year. Some of the fruit are at least grapefruit size. They taste good but wondering if this is abnormal or within the typical size range. Anybody know?

My seeded (sunflower seeds and pepitas) multigrain sourdough bake this week. I pushed fermentation time and love the outcome. Cold retard for 17 hours so there’s a nice tang.
