There is a reason youtube doesn't have competition, peertube is not even close. Unless someone has billions of dollars to burn, then it's possible, instagram tried and failed

I suspect more generally, we could see feeds become something like spotify playlists, and some will get real popular regardless of who made it, and other times because of who made it. It could be highly curated and tailored, even configurable by the user. ATProto makes things more interesting
