mainly this (cooking.nytimes.com/recipes/1016...) but using kenji lopez alt's goated pie crust recipe (www.seriouseats.com/easy-pie-dou...) and when i make the filling i use about 1/2 the sugar and i also let the fruit macerate before draining most of the liquid so it doesn't leak out!
