The artichoke season is in full swing. The first ones were the spiny Sardinians, from the Southern plains of the island (Villasor, Samassi..).

What was super also was this Sardinian wine, west coast of the island, a local vine variety, excellent.

Tonight, as side dish for the risotto, we'll have eggplant and Piennolo tomatoes (cold dried cherry tomatoes from the Neapolis neighbourhood), prepared in a large frying pan with garlic and rosemary.

For the time being I'll just rub some salt in their wounds. Hehehe

Try Carnaroli, thicker grain, while you're at it.
