Gave it a nice pan fry, with some rice pillaf and homemade tartar sauce for lunch. The skin is super crispy, and there isn't any fish smell or taste 😍🐠

I'm more used to changing flavor profiles to mask flavors, but here I'm gonna try and emphasize the Hatch as much as possible.

I taste bitters very quickly, so I usually don't like paté, so making one I like was the challenge. This one ended up great, using bourbon to flavor the paté, and a cranberry gelée on top to add some acid.
