Here we go! Turkish manti is a go, and these homemade pork dumplings were served with a sour cream, dill, rosemary, and chili oil sauce, alongside some browned butter with paprika!!

Talk about bad to the bone! This nearly 24 hour beef base is gonna cool down for now. The cloudy stuff on top is tallow, so we'll cool this overnight and then skim it off to fry the brisket in, along with the whole spices and other aromatics later.

I have a bone to pick with you...or rather, bones to roast for use in pho later.

By roasting these, it eliminates the need for blanching the bones, and therefore retains a deeper color to the pho & keeps all that richness. I'll be letting this go for 24 hours, and then cooling it in the fridge.

Man, these were a lot of work, but the manti is done! Now they go in the freezer for later, when I'll boil them and put them with a garlic yogurt dill sauce and chili oil on top. <3

Now that I have a pasta roller, I am gonna try my hand at some homemade manti! I got some fresh dill & rosemary I wanna put in there, along with some dried shiitake mushrooms that I wanna rehydrate before mincing.

Lastly, I made the cheese blend of garlic paste, ricotta, eggs, rosemary/parsley, pecorino, mozzarella, & parmesan! More mozzarella will be layered across it as well, and then the whole dish is covered overnight to marry the flavors!!!

Roasted red peppers, celery, & garlic, plus toasted fennel seeds, crushed red pep, oregano, & a bouquet garni of rosemary & parsley!

I added tomato paste + white wine before the garnish, then added canned tomatoes & water & pureed the veggies before the sausage + smoked pork went in! >>

For this homemade lasagna, I even attempted to make the pasta from scratch! I got a roller and made some (pitiful) sheets, but they're gonna be covered in the sauce.

The sauce starts with some hot sausage fried in oil. Next goes calabrian chiles, onion, carrot >>
