I don't have timelapses for my pixel art (I'd have to save it in stages manually and stitch them together myself), but I do have a version of Luminous Valerian from before I started detailing it.

I usually do the lines and flats in Paint .NET, then switch to GraphicsGale for detailing.
A side by side comparison of a pixel art character sprite, depicting a white-furred anthropomorphic bat monster with large wings and a long tail, holding golden scales of justice. The left side of the image shows what the sprite looked like before it was shaded and detailed. It has solid black outlines and is blocked out with flat, untextured colors. The right side shows the finished sprite, with significantly increased detailing and shading. The outlines have also been softened from harsh black to shades that are only slightly darker than the adjacent colors on the body.

The original sprites are scaled up 4x, but the dithering between the two colors was done using GraphicsGale's 256-color "transparency". That allowed me to make it fade from one sprite to the other on a kind of "sub-pixel" level here.

I think it's a pretty neat effect.
Closeup showing the transition between both colors of the sprite. It's apparently that each "pixel" on the sprite is actually 16 pixels (a 4x4 square). At this phase in the color transition, each real pixel that makes up the character sprite is alternating between the appropriate color from that 4x4 pixel on either sprite.

Timelapse!

I was not planning on animating this initially - it was just going to be a sheath / flaccid / erect alt, but I kept adding bigger versions.

Ended up exporting each "frame" and stitching them together in kdenlive (or GraphicsGale, for the gif version on FA)
