Israel allowing “a few trucks of food to enter Gaza” isn’t a U-turn. It’s a tactic to get people to stop saying you’ve completely shut down aid from coming in. Aid groups have said Gaza needs at least 500 trucks a day.

I'm not sure what Democrats expected to happen here (other than that they'd be on the other end of the hammer) when they helped codify into law the concept that anti-Zionism was antisemitism. Who signed off on that and didn't think it would be used as a weapon to go after groups that are disliked?
An appropriate way to understand Project Esther, and Trump's "anti-semitism" purge, is that it is predominantly driven by right-wing Christian nationalists attacking institutions they dislike, even if it also includes attacking Jewish students and groups.
