Flat bread dough resting after its first quick knead. After a quick rest, it’ll get cut into small sections, folded (to build some air pockets!), shaped into little rounds, then I’ll put it away in the fridge. Nice thing about this dough: you just roll out & cook flat bread when you want to eat it.

Put the dough under plastic to let the yeast eat the flour & (high temp) water, put the pinot noir in the fridge b/c I can only drink a little each evening and I kinda prefer it somewhat chilled? I’ll take it out a while before I plan to sip some tomorrow.

Opened a pinot noir while I mde bread dough. Very unfair that red wine makes me feel sick despite tasting so good lol.

Bread has had its initial covered bake. Going back in for a final ~20 minutes without a cover, also on a somewhat lower heat. Let’s brown this boule!

After I put the boule into the oven, I had to clean the counter.

Protip: you cannot put flour down a drain. It is just cement at that point lol.

It’s not perfect but it’s basically back to square one.

Shaped into a boule, gonna let it rise under clean cotton on the silpat for about an hour. Put the clay in the oven, gonna start the fire in about ~30 mins.

Dough rose well and smells like red wine now. Plopped it onto my work surface after I floured it, folded it a few times, and now it is rising under the same plastic wrap it rose under all day—for another 15 mins lol.

I have some new neighbors. In the corridor, it sounds like they only speak Japanese. I don’t know how to make friends with them…I just plan to make bread for them.

I’m a very one-trick pony in this regard.

Trying a new (to me) recipe for garlic & herb roasted potatoes. I think the newest think about what I am doing is…for once I didn’t wait until I noticed the potatoes starting to go bad before panic-cooking them lol
