And bottled. Siphon got away from me and a bit of the lees ended up in the bottles, but it'll settle out. Two litres of it straight, one with an additional 100g honey to backsweeten, and one with 20ml vanilla extract as a rhubarb-and-custard experiment. 12.8% ABV not to be sneezed at either!

It'd be a fine NEIPA, but I think I'll drop in some pectic enzyme and see how I get on. Yes I should have added it pre-ferment, no I won't learn from my mistakes, maybe I would like to go to lunch, thank you!
