Absolutely — although many teachers I know have never stopped giving students creative assignments to write (by hand or offline) in class. We understand that teaching writing is about so much more than a pile of words on the page. My students know this, too.
Here's the thing, also. If you give students interesting writing challenges that require them to do the human work of writing, believe it or not, they will come to enjoy and respect what writing means. That schools haven't inculcated these attitudes is a shame, but it's fixable.
Large language models have near-zero utility when it comes to helping students develop as writers. I say this because of what I value in the writing experience: thinking, feeling, human exchange and communication with readers.
